- You stop YOURSELF: Fermarsi... Mi sono fermata al negozio. - I stopped at the store.
- You stop (verb)ING: Smettere di...plus the infinitive of the verb. You can ONLY use smettere di if you name that verb. Il gatto ha smesso di fare le fusa. - The cat stopped purring.
- You stop a NOUN: Fermare... If you stop a noun, use fermare. L'autista ha fermato la macchina. - The driver stopped the car.
We translated sentences that you brought:
Ci siamo fermati al ristorante. - We stopped at the restaurant.
Ha fermato la bambina. - She stopped the child.
Ha smesso di nevicare. - It stopped snowing.
Ci siamo fermati al ristorante a mangiare qualcosa. - We stopped at the restaurant to eat something. (notice the "fermare a ...")
Il cane si ferma quando gli fa male la gamba. - The dog stops when his leg hurts.
-"How long have you (verb)ed?" "I have been (verb)ing for..."
To say these in Italian, you do not use the same tenses that you do in English.
If you are STILL DOING THE THING, you use "Da" plus the PRESENT TENSE.
("Da" in this use means "since" or "from".)
Cucino da dieci anni. - "I cook since ten years" means "I have been cooking for ten years."
Siamo in Italia da due settimane. - "We are in Italy since two weeks" means "We have been in Italy for two weeks."
However... If the (verb) in your sentence has an endpoint in time, you get to use "Per" plus whatever tense you would use in English. It doesn't matter if it's past, present, or future.
In each of the following examples, the verb has an endpoint in time:
Ho cucinato per dieci anni. - I cooked for ten years. (same as English)
Siamo stati in Italia per due settimane.- We were in Italy for two weeks. (same as English)
Restiamo in quest'agriturismo per due settimane. - We are staying in this agriturismo for two weeks. (same as English)
Andiamo in Italia per due settimane l'estate prossima. - We are going to Italy for two weeks next summer. (same as English)

3. Presente + "da" + espressioni di tempo. (from pages 180 and 181). Think of five things that you like to do, or that you used to like to do (and don't do any more). Make up mini-dialogs based on these, following this example:
Notice that you use "da" plus the present tense for something that started in the past and you still do.
A: "Mi piace ballare." - I like to dance.
B: "Da quanto (tempo) balli?" - How long have you been dancing?
A: "Ballo da cinque anni." - I have been dancing for five years.
Use "Mi piace" plus infinitive. Then ask the question (using "Da quanto..." plus present tense verb.) Then answer using "da" plus the present tense.
Notice that you use "per" with something you used to like to do, but you don't do it any more.
A: "Mi piaceva cucinare." - I used to like to cook. (imperfetto plus infinitive)
B: "Per quanto (tempo) hai cucinato?" - How long did you cook?
A: "Ho cucinato per cinque anni." - I cooked for five years.
Use "Mi piaceva" plus infinitive. Then ask the question using "Per quanto" plus passato prossimo. Then answer using "per" plus the passato prossimo.
